It is easy to pick up a carton of juice from the supermarket. Easy and convenient. I’ll openly confess that most of the time, this is exactly how my household rolls. This has got a whole lot easier since Christmas Day when I unwrapped a new juicer. I may have got a little excited when I saw it.
Since Christmas, I have been experimenting at the weekends and serving up some ultra fresh, incredibly healthy libations. My favourite so far is this Forced Rhubarb Juice with Ginger, Orange and Apple.
Forced rhubarb has a short season, so when it appeared in my local supermarket just a few weeks ago I couldn’t resist buying a stack of it immediately for a photography project I’d been planning. Photos captured, it was a quick deliberation as to what to do with my cut up pieces of rhubarb. Yup, they were destined for the juicer.
Childhood memories of picking rhubarb stalks fresh from the garden and dipping them into sugar before scoffing chunks down reminded me how sharp this vegetable is. So I knew I needed to soften that sharpness in order to enjoy its flavour in juice form. I began to experiment by adding some orange into the mix. After all, rhubarb and orange are a classic pairing of flavours. Wanting to provide a wintery nutritional boost, a good amount of ginger bolstered the flavour nicely. Finally, since I’m not hugely in favour of anything too strong in the orange juice department, I decided to tone down the citrus element of the drink by adding in some sweet and crisp apples.
After a few rounds of juicing, I got a blend of Rhubarb Juice with Ginger, Orange and Apple that embraces the tangy and tart rhubarb flavour whilst also managing to be sweet and gingery. This drink is lively and vibrant and it a real celebration of wintery flavours.
I apologise to anybody hoping to make this Rhubarb Juice who does not yet own a juicer. I’m afraid that you will struggle without one. The good news is that there are plenty of affordable juicing machines available these days. My husband bought me this Aicok Juicer which has proved to be:

- 250 g/ 9 oz Forced rhubarb (fresh, not frozen)
- 30 g/ 1 oz Fresh ginger
- 3 Large oranges
- 3 Large apples (I used Pink Lady)
Chop the rhubarb
Peel & chop the ginger roughly
Peel the orange and remove the pith. Chop in half and remove any obvious seeds
Quarter the apples, removing any stalks as necessary
Juice all ingredients in your juicing machine
Stir briefly and enjoy straight away (see notes)
This juice is intended to be enjoyed fresh and it does not store well - 2 hours in the fridge is the top limit. The flavour does deteriorate if left for too long.
If the juice separates as it settles, just give it a good stir to reblend the various juices.
