The Autumn Gin & Tonic with Blackberry & Apple

The Autumn Gin & Tonic is a seasonal twist on the classic G&T. A splash of pear liqueur & a touch of Crème de mûre team up with fresh blackberries and apple to create a deep, blushing G&T drink. A dusting of cinnamon adds a warming aroma to complete the autumnal mood.

Ingredients

For the Garnish

  • 1 slice fresh apple (1-2mm thick)
  • 2.5 ml/ ½ tsp honey
  • 5 ml/ 1 tsp Just boiled water
  • 2 Fresh blackberries
  • Ground cinnamon

For the Autumn Gin & Tonic

  • 2 Fresh blackberries
  • 40 ml London Dry Gin (preferably spicy)
  • 1 teaspoon Poire William
  • teaspoons Creme de Mure or similar blackberry liqueur
  • 2 teaspoons Apple juice (cloudy)
  • 120 ml/ ½ cup Tonic water

Instructions

  • Dissolve the honey in the water and brush over both sides of the apple
  • Lay the apple slice on a baking tin covered in baking parchment and let cook for 45 minutes at 150C/ 300F/ GM2 for 45 minutes
  • Let cool completely

Make the Autumn Gin & Tonic

  • Put the blackberries into a mixing glass or jug with the gin, Poire William, Creme de Mure and apple juice. Crush the berries with a cocktail muddler or the end of a rolling pin 
  • Pass the liquid through coffee/ tea filter paper and pour into a serving glass filled with ice (see notes)
  • Top with tonic water and garnish with the blackberries, sliced apple and a light dusting of ground cinnamon
  • Serve immediately

Notes

It is important to strain the liquid through filter paper to ensure the drink is clear and free from berry residue. Passing through a mesh sieve is not sufficient if a clear drink is the aim.
