Cherry Smoothie with Coconut

This cherry smoothie recipe is a beautiful blend of coconut, cherry, cinnamon & vanilla. It's pertinently pink, wickedly delicious and wholly virtuous.

Ingredients

  • 200 ml/ ¾ cup + 2 tablespoon Coconut water
  • 150 g/ 6oz Pitted cherries - fresh or frozen (see note above)
  • 100 g/ 4oz Chopped pineapple (fresh or frozen - see note above)
  • 2 tsp (heaped) Dessicated (flaked) coconut
  • 1 teaspoon Vanilla extract
  • ½ teaspoon Ground cinnamon

Instructions

  • Put all of the ingredients into a blender and whizz until smooth
  • Pour into 2 glasses and serve immediately

Notes

Expert Tips

  • I recommend serving this smoothie immediately after blending since natural separation of the ingredients does occur after 5-10 minutes (it's still tasty though)
  • When separation occurs the drink can be easily reblended by shaking or stirring vigorously
  • You can make this drink with fresh or frozen cherries. Likewise, the pineapple can be fresh, frozen or tinned
  • For ease of blending, I suggest that only one of these fruits be frozen - either the cherries or the pineapple - not both
  • Assuming that one of the fruits is frozen there is no need to add ice to the blender
  • Check your blender can handle ice if you are adding it to your smoothie

Storage

This drink can be stored in the fridge for up to 48 hours. Pour it into a bottle with a screwtop lid and keep refrigerated. It will separate, so shake vigorously before pouring it into a glass - hence the screw top lid.
