Sparkling Pomegranate Lemon Cooler
This Sparkling Pomegranate Lemon Cooler uses homemade grenadine to create a non-alcoholic drink ideal for a party. Loaded with fresh fruit and mint leaves it's a very pretty drink to serve. Add a splash of vodka or gin for a boozy hit. Makes enough grenadine for 12-15 servings.

For the Homemade Grenadine
- 250 ml/ 1 cup Pomegranate Juice (I used POM)
- 150 g/ ¾ cup White sugar
- ½ teaspoon Lemon Juice
- 1 Dash Orange Blossom water (optional)
For the Sparkling Pomegranate Lemon Cooler (per serving)
- 20 ml/ 4 tsp Grenadine
- 200 ml/ ⅘ cup Sparkling Cloudy Lemonade (I used San Pellegrino)
Optional Extras
- Raspberries
- Blueberries
- Fresh Mint
- 45 ml/ 1 ½ fl oz Vodka or Gin
For the Grenadine Syrup
Put the sugar and pomegranate juice into a small heavy based pan and cook on a low-moderate heat until the sugar has dissolved
Turn up the heat and let simmer for 2 minutes
Remove from the heat and stir in the lemon juice & orange blossom water (if using). Let cool completely and then decant into a bottle with a screw cap lid
Store in the fridge for up to 4 weeks
For the Sparkling Pomegranate Lemon Cooler
Put a handful of ice into a tumbler and pour the grenadine in
Add ⅓ of the lemonade and the vodka or gin (if using). Stir briskly.
Add the fresh fruit and mint then top with the remaining lemonade. Serve immediately
