Apple Lemon Mint Fruit Cooler
This Fruit Cooler of mine is a simple blend of apple juice, lemon juice and fresh mint. It is fresh, fruity, tangy and amazingly thirst quenching.

Ingredients
600
ml/ 2 ½ cups
Cloudy apple juice

ml/ 3 tablespoon
Freshly squeezed lemon juice

Large mint leaves
To serve
Crushed ice
Lemon slices
Mint leaves
Instructions
Put the ingredients into a blender and blitz for several minutes until the mint is very finely chopped
Allow the juice to settle and any froth to disappear
Decant into a screwcap jar and refrigerate until needed
Serving
Fill a glass with crushed ice
Gently shake the bottle to re-distribute the mint leaves before pouring over the ice
Garnish with lemon slices and fresh mint leaves if desired
Notes
The mint will naturally settle at the bottom of the juice when stored. Gently shake the bottle prior to serving to ensure the mint is re-distributed.
