Christmas Mulled Gin & Tonic with Apple
This apple-based Mulled Gin & Tonic is easy to pull together and makes a wonderful Christmassy hot drink to serve to a crowd.
Non-drinkers can enjoy the mulled apple juice just as it is.

Ingredients
For the Mulled Apple Juice

ltr/ 4 cups
Cloudy apple juice

Fresh cranberries

Cinnamon stick - 10cm

Allspice berries

For the Mulled Gin & Tonic

ml/ ½ cup
Mulled apple juice

ml/ 1 fl oz
Gin

Tonic Syrup
To garnish: fresh cranberries, cinnamon, star anise
Instructions
Make the Mulled Apple Juice
Bash the cinnamon stick a few times using a pestle and mortar and drop into a medium saucepan
Poke the cloves into the clementine and add to the pan
Tap the allspice berries to just split them and add to the pan along with all remaining ingredients
Put the lid on the pan and heat to almost boiling, then turn off the heat and leave to infuse for at least 1 hour
Strain through a fine-meshed sieve, decant into a screwtop bottle and refrigerate until required (keeps for up to 5 days)
Make the Mulled Gin & Tonic
Gently reheat sufficient mulled apple juice in a pan until hot but not boiling
Pour the gin and the
tonic syrup
into a heatproof glass and top with the hot apple juice
Garnish with cranberries, star anise and a cinnamon stick
