Ginger and pineapple smoothie is bright, bold, soothing and deliciously fresh tasting. It's a light and fresh pineapple smoothie without banana with a tangy, tropical taste to it.
250gPineapple preferably frozen, cut into small chunks
240mlCoconut water
2Orangespeeled, halved and seeds removed
15gFresh gingerpeeled & chopped
4teaspoonsdessicated coconutunsweetened
4teaspoonHoneyrunny
Iceoptional - depending how thick you like you smoothie, but recommended if your pineapple is not frozen
Pineapple & toasted desiccated coconut to garnishoptional
Instructions
Peel the orange, cut in half and remove any pips.
Peel the ginger and chop roughly.
Put all of the ingredients into a blender, secure the lid and whizz for 1-2 minutes until smooth.
Divide between 2 glasses, top with extra pineapple and toasted coconut, if desired, and drink immediately.
Notes
Use a teaspoon to peel the ginger: Rub the end of a teaspoon over the ginger and you'll be surprised how easy it is to remove the skin.
Vary the amount of ginger: Add more/ less to suit your personal taste preferences. Or leave it out completely for a straight pineapple and orange smoothie.
Adjust the sweetness: Take the quantity of honey included in the recipe as a guide. If your fruit is on the tart side you may need a little more. If your fruit is very sweet, you might be able to lower the amonut of honey used or omit it completely. If you are unsure, blitz the smoothie prior to adding any honey, taste it and add in the honey accordingly.
Toasted coconut garnish: Add a tablespoon of desiccated coconut to a small pan and place it over mderate heat, stirring constantly, until golden. Tip onto a plate to cool and use as a garnish for your pineapple smoothie.

Creamy pineapple smoothie without banana
I'm a confirmed banana hater. It's the smell, taste and texture, so this is a recipe for pineapple smoothie without banana included. Sweet joy.If, however, you would like to add a touch of creaminess to this ginger, pineapple and orange smoothie you have 2 options:
Add in 30g of your favourite plain yoghurt.
Alternatively, replace half of the coconut water for coconut milk. It's fine to use the cartoned variety often used for drinks & pouring over cereals rather than tinned coconut milk as the latter can be much higher in fat and calories.
Vegan ginger and pineapple smoothie
To make this ginger and orange pineapple smoothie vegan replace the honey with a suitable alternative such as maple syrup or agave syrup. If you intend to add yoghurt ensure it is vegan.
