What is chocolate tiffin?
Chocolate tiffin is a no bake traybake made from biscuits, golden syrup and cocoa. It typically includes crushed biscuits and sometimes dried fruit or nuts. A thin layer of chocolate is often spread across the top.
Is chocolate tiffin the same as rocky road?
No, it is not, though these two no-bake treats are quite similar. In general, rocky road includes biscuits and marshmallows (and sometimes nuts). Tiffin cake does not include marshmallows.
As these Ferrero Rocher slices do not include marshmallows, they are more like tiffin than rocky road.
Is chocolate tiffin the same as fridge cake?
Tiffin and chocolate fridge cake are also very similar. Fridge cake is often more basic than tiffin, with the only addition to the melted ingredients being biscuits rather than other add-ins, such as the dried fruit or nuts commonly included in tiffin recipes.

Ingredients notes

Ferrero Rocher chocolates: You cannot make Ferrero Rocher tiffin slices without them. However, if you want a cheaper version of this recipe, omit them to make chocolate hazelnut tiffin!
Chocolate: I recommend dark chocolate with 70% cocoa solids for this tiffin recipe as it pairs so well with the hazelnut flavour and sea salt. You could get away with a slightly lighter chocolate with 60% cocoa solids if preferred.
Golden syrup: This is a key ingredient in classic tiffin recipes. Do not use honey or maple syrup in it's place, but if you cannot get hold of it, light corn syrup can be used instead.
Biscuits: I've used shortbread fingers but you may swap these for other biscuits of your choice such as Digestives or Graham crackers.
Hazelnuts: Use whole, blanched hazelnuts.
Sea Salt: Optional, but it really elevates the grown-up flavour profile in these Ferrero Rocher slices.
Step by step instructions

Step 1. Put the chocolate, butter and golden syrup into a heatproof bowl and microwave, on medium heat, in 30 second bursts, stirring between each burst, until the ingredients have melted. Use a handheld balloon whisk to mix the ingredients together.

Step 2. Meanwhile, chop 12 of the Ferrero Rocher chocolates into quarters and roughly chop the shortbread biscuits.

Step 3. Lightly toast the hazelnuts for 10 minutes in the oven (optional) before chopping them roughly.

Step 4. Sieve the cocoa powder into the chocolate mixture, sprinkle in the sea salt, add the vanilla extract and use the balloon whisk to mix them in until smooth.

Step 5. Add the chopped shortbread and chopped hazelnuts to the chocolate mixture.

Step 6. Fold then in using a large metal spoon until everything is completely coated in the chocolate.

Step 7. Spoon just under half of the mixture into a prepared baking tin, pushing it down with the back of the metal spoon. Scatter the chopped Ferrero Rocher chocolate over the top.

Step 8. Carefully spoon the remaining mixture over the chopped chocolates ensuring they are completely covered. Level the surface using the back of the spoon then press 12 whole Ferrero Rocher chocolates (wrappers removed) onto the top of the tiffin.
Step 9. Cover and transfer to the fridge to set for 2-3 hours, then cut the tiffin into slices.
How to slice tiffin cake neatly
- Let the tiffin set completely: this will take around 2-3 hours in the fridge.
- Let it come to room temperature again: Take the tiffin out of the fridge 30 minutes before cutting it up.
- Score the top of the tiffin to mark where you want to cut it.
- Warm a large sharp knife in hot water: Dry it well and use it to cut the tiffin along the markings in one swift action, pressing straight down on the knife.
- Wipe the knife clean if necessary between cuts: Rewarm it before continuing with the cutting.
Expert Tips
Top Tip: Don't stir the chopped Ferrero Rocher chocolates directly into the tiffin mixture as the wafer in the chocolates might crumble too much. It is better to place the chunks over a layer of tiffin mixture and then top them with more mixture.
- Weigh ingredients accurately: Use grams and digital kitchen scales as it is the most precise way to measure ingredients.
- Use the correct-sized tin: This recipe requires a 20cm (8-inch) square baking tin. If the tin is too small the Ferrero Rocher slices will be too thick to bite. If the tin is too large you will struggle to sandwich the chunks of Fererro Rocher chocolates between each layer.
- Grease and line the baking tin: It will be much easier to remove the set tiffin from it.
- Ensure the chopped chocolates are entirely covered by the tiffin mixture: If wafer remains exposed to the air it will go soft.
- To make smaller squares: Press 16 whole Ferrero Rocher chocolates into the top of the tiffin before it sets.
- On a budget? Ferrero Rocher chocolates do bump up the cost of making this chocolate tiffin recipe. There are 2 ways to reduce the cost:
- Include them in the centre of the the tiffin only: Top the tiffin with a thin layer of chocolate instead to give it a neat finish.
- Leave them out entirely: This turns them into hazelnut and chocolate tiffin slices. Again, a top layer of chocolate is recommended for a polished look.
Frequently asked questions
Yes, you can. Most tiffin recipes include this, but it is certainly not essential for these Ferrero Rocher slices as they are already very rich. To do so, melt 200g chocolate of your choice (I like semi-sweet chocolate with 55% cocoa solids), mix in 1 teaspoon flavourless cooking oil and spread it over the top of the tiffin before pressing the Ferrero Rocher chocolates on top.
Golden syrup is the best type of syrup to use when making chocolate tiffin cake. If you cannot get golden syrup the next best alternative would be light corn syrup. I do not recommend honey or maple syrup.
Yes it can. To make gluten-free tiffin cake you will need to ensure all ingredients are gluten-free. In particular, ensure the shortbread or biscuits used are gluten-free. Note: Ferror Rocher chocolates are not gluten-free so these would need to be omitted or replaced with a gluten-free alternative.
Store your tiffin slices in the fridge in an airtight container for up to 2 weeks. Bring out slices as required, letting them rest at room temperature for 15 minutes before eating. On hot days you may prefer to eat them straight from the fridge.
Variations
- Swap the biscuits: Shortbread is a great addition but you can easily swap these for Digestive biscuits, Hobnobs or even ginger nuts. Get creative with your tiffin recipe.
- Dried fruit: For a tangy burst of flavour add in 60g of either raisins or dried cherries. Both compliment the chocolate hazelnut profile of these tiffin slices deliciously.
- Add alcohol: A hint of rum is also a great addition to this grown-up flavour profile. Stir around 30ml in to the liquid mixture before adding the biscuts and chocolate.
- Swap the chocolates: Replace the Ferrero Rocher with other chocolate hazelnut goodies such as Lindor hazelnut truffles or opt for different flavour chocolates such as Baileys truffles, caramel truffles or orange truffles.

Chocolate Tiffin Cake with Ferrero Rochers
Equipment
- 1 x 20cm (8-inch) square cake tin
Ingredients
- 400 g Dark chocolate 72% cocoa solids
- 125 g Butter
- 125 g Golden syrup
- 1½ tablespoons Cocoa powder
- ½ teaspoon Sea salt flakes optional
- 300 g Shortbread biscuits
- 100 g Hazelnuts blanched
- 24 Ferrero Rocher chocolates (or 28 if cutting into 16 squares)
Instructions
- Grease and line a 20cm (8-inch) square baking tin with baking parchment.
- If roasting the hazelnuts put them onto a baking sheet lined with parchment and roast in the oven at 150℃/ 300℉ for 10 minutes. Let them cool then chop roughly (not too small).
- Meanwhile, put the chocolate, butter and golden syrup into a heatproof bowl. Microwave on medium heat, in 30 second bursts, stirring between each one, until the ingredients have melted. Use a handheld balloon whisk to mix the ingredients together until combined.
- Meanwhile, chop 12 of the Ferrero Rocher chocolates into quarters and roughly chop the shortbread biscuits.
- Sieve the cocoa powder into the chocolate mixture, sprinkle in the sea salt and add the vanilla extract. Use the balloon whisk to mix them in until smooth.
- Add the chopped shortbread and chopped hazelnuts to the chocolate mixture and fold then in using a large metal spoon until everything is completely coated in the chocolate.
- Spoon just under half of the mixture into a prepared baking tin, pushing it down with the back of the metal spoon and ensuring it reaches the corners of the tin. Scatter the chopped Ferrero Rocher chocolates over the top evenly.
- Carefully spoon the remaining tiffin mixture all over the chopped chocolates ensuring they are completely covered. Level the surface using the back on the spoon then press 12 whole Ferrero Rocher chocolates (wrappers removed) onto the top of the tiffin.
- Cover with food wrap and transfer to the fridge to set for 2-3 hours.
- When ready to cut your tiffin into slices, remove it from the fridge and let it sit at room temperature for 30 minutes. Remove it from the tin carefully and cut into 12 slices (or 16 squares if you have topped it with 16 chocolates).
