I created this recipe using my cinnamon dolce syrup which has notes of vanilla and mellow brown sugar, so think of this as a recipe for a cinnamon bun latte.

Ingredients Notes

Coffee: This cinnamon latte is best made with freshly brewed espresso. Use around 18g of ground espresso per 75ml water to achieve a rich, full-bodied flavour. The coffee doesn't need to be anything special - just a variety you enjoy drinking and are happy to enhance with extra flavour to (you might want to save your higher-end beans for simple unflavoured coffee drinks so their flavour isn't masked).
Cinnamon syrup: I highly recommend making a batch of cinnamon dolce syrup but you can, of course, use store-bought instead. If you cannot get hold of cinnamon dolce syrup you can use cinnamon syrup, cinnamon bun syrup or brown sugar cinnamon syrup instead.
Milk: Whole (full-fat) milk or barista-style oat milk are best for making this cinnamon bun latte. The espresso waters down the creaminess of the milk used so starting off with the richest milk available is the best way to ensure that this drink is as luxurious as it should be.
Equipment Notes
If you have one use an espresso machine to brew your coffee and steam the milk. Failing that, use a cafetiere (French press) to make the espresso andwarm the milk in a pan on the hob or in a velvetiser if you have one.

Step 1. Pour the cinnamon syrup into a warmed serving glass or mug.

Step 2. Pour in freshly brewed espresso coffee and stir.

A straight cinnamon latte includes syrup flavoured only with cinnamon. A cinnamon bun latte is made using a syrup flavoured with cinnamon, vanilla and brown sugar (commercial brand syrup may also include artificial sweeteners to replicate the flavour of cream cheese frosting).
Yes, you can, but the drink will be markedly different that the latte recipe presented here. Without syrup, the drink will not be sweet (but you can add sugar) and the ground spice will settle at the bottom of your mug, so you may want to leave the last few sips behind. The best way to make cinnamon coffee like this is to add ½ teaspoon ground cinnamon to the milk as it heats up.
Yes, you can. Simple brew as many servings of coffee as you need then add 20ml cinnamon syrup per serving. Add the same number of servings of milk, stir well then cover it and store the mixture in the fridge until you are ready to enjoy it.
When ready to serve a portion give the liquid a stir, pour out 245ml and heat - either on the hob, in the microwave or in a velvetiser machine (the best option as a nice frothy top will be created)

- Fill a large heatproof glass with plenty of ice cubes.
